BEHIND THE BLEND

EXPERIENCE N.17 // SYNCHRONICITY // BLENDING NOTES

This is Pete's favorite blend to date. Which, given the awards we've picked up since launch, is saying something. Deep, complex and oozing balance, this blend was built around a juicy Rioja wine cask of unpeated whisky codenamed Staoisha by the brokers. On it's own this cask was a little much, the wine had taken the delicate spirit too far. This is where blending comes in. Not all the whiskies we find are perfect, but they have certain charms that can be coaxed out of them. This was an example of that.

Our mission was to add some spirit character back into the proceedings, which we did by using a duo of vibrant Speyside single malts, and a third much meatier, richer speyside malt. Together this trio make up nearly 70% of the blend. Once we knew this combination was in play, it was only a matter of using grain to bridge the flavours. We selected two grains for the purpose. One adding a creaminess to the texture the other a very old sample drawing out the overall experience and giving the dram a really poised, long finish on the palate.

Flavour wise, we're left with a dram that moves from maritime malt, harbour and a waxiness through a real subtle smoke that builds, underpinned by a marmalade sweetness on the sides of the mouth. The finish is long, with a herbal, lingering smokiness that keeps one coming back for another sip.
